The most important meal of the day just got REALLY healthy and easy thanks to some great naturally vegan breakfast ideas. We all know how hectic mornings can be trying to get out the door. Well, this week I will share two recipes that will make taking 5 minutes out of your time, so worth it!
First, my favorite- Oatmeal with Blueberries(I have never met a blueberry I didn’t like).
You can stand in the supermarket cereal isle for hours trying to figure out which are made with milk or egg but here is my “go to” healthy and quick breakfast:
Quaker Oats High Fiber Oatmeal is naturally vegan. I also add Chia and Flax seeds for an extra boost of nutrition.
Directions:
Place one packet of Oatmeal into a bowl with recommended amount of water
Microwave for one minute
Remove and add 1 tbs of Chia Seeds and 1 tbs of Flaxseed
Place back in microwave and cook for 1 minute
Remove and add 3 tbs of Blueberries
I also add 1 stevia because I like it sweet
Ingredients:
Oatmeal Packet- 170 calories
Chia seeds- 40 calories
Flaxseed- 30 calories
Blueberries- 90 calories
Total: 330 calories
Chia and Flax seeds are used in both of these recipes. Preliminary studies show that flaxseed may help fight everything from heart disease and diabetes to breast cancer. Chia seeds are a concentrated food containing healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.
RECIPE 2-
James Favorite- PANCAKES
If you are searching for a pancake mix that does not require egg or milk you may run into some troubles. But we found that we could substitute these ingredients and make pancakes that are delicious and nutritious.
Keep I mind that James likes his pancakes a bit burnt, these still look and taste fabulous. He also decided to make a full batch of batter and keep in in the refrigerator and use as needed.
Ingredients:
Pancake mix- 150 calories
Syrup- 100 calories
Butter- 90 calories
Oil- 100 calories
Total: 440 or 590(if you only want two servings, James likes to eat!) calories
Directions:
We followed the directions on the box, with two exceptions:
Almond Milk in place of milk
Eggs- Take one tablespoon of chia seeds or flaxseed(works with either but James likes the chia) add 2 tablespoons of water and mix until it gets gooey. This will work for any recipe that requires eggs.
Thanks to the advancement in popularity of vegan products you can find milk and butter almost anywhere these days.
All of these ingredients can be found in your local supermarket including: Walmart, Stop and Shop, Shoprite and Price Chopper. When looking for Chia and Flax seeds get them at Walmart or your local market, Wholefoods prices are much higher for these products. You should be able to get each for about $4.00 for a 16 ounce bag.
