I grew up in an Italian family. Every Sunday the whole family would get together for dinner. The menu, of course…..PASTA. This tradition is still going on even though we are practicing vegans.
Here are two great recipes for delicious Italian dinners for Sundays or any days.
Chick’n Parmigiana:
This Chick’n Parm is AMAZING. You can serve this to anyone and they would never know it was not real. It is a Sunday treat for the entire family.
Ingredients:
Gardien Turkey Cutlets- YES you are reading this correctly, we are making Chick’n
Parm with Turkey Cutlets, why you ask? Because they are so darn good! Found in frozen food section of most markets including Stop and Shop, Walmart, Price Chopper. Cost: $4.00 package of 4, comes with gravey that we won’t be using for this but save it for another time(delicious on a baked potato). Calories: 2 Cutlets= 240 calories
Marinara Sauce- Your choice here . Ours is homemade(email me if you want recipe). Calories 40 per serving
Spaghetti- Our favorite is Ancient Grain and can be found at Stop and Shop. But you can use any pasta that does not contain egg. Calories: 180 per 2 ounce serving
Mozzarella Cheese- So Delicious and Follow Your Heart make the best. Can be found at Wholefoods. You can also use Go Veggie Cheedar Shreds(what I used here). Go Veggie can be found at Walmart, Price Chopper, Stop and Shop. Cost: $3.99 per package. Calories: Use ½ serving- 35
Be sure that both Go Veggie Cheedar and the Parm have the purple VEGAN label.
Parmigiana Cheese- Go Veggie makes really good Parm cheese. Found in most stores in the produce section with the Go Veggie Cheedar Shreds. Cost 4.99 Calories 20
Totally Calories: 515 – a bit over but TOTALLY worth it!
Directions:
Preheat oven to 400 while boiling water for pasta
Place Cutlets in the microwave for one minute then put on cookie tray and put into the oven for 10 minutes
Cook pasta for desired texture(I like mine Al denti (hard))
Remove Cutlets, add a tsp of Sauce and Cheese on top of each and cook for 2 more minutes
Drain pasta, add sauce and Cutlets. Top with Parmigiana cheese
Spaghetti and Meatballs
This is a quick, low calorie meal for any day of the week. The Gardien Meatballs are so good. I had a holiday party and served them in Marinara sauce, but did not tell anyone that they were Vegan. People were eating them like crazy and when I announced that they were Vegan, one guy got mad!- He had just had a conversation with his daughter that anything called “meatless meat” has to taste terrible. I proved him wrong!
Ingredients:
Spaghetti- Same as above Calories 180
Meat sauce- Use Your favorite Marinara sauce and add Gardien Meat Crumbles(Or Boca if you prefer(35 calories). Found in the freezer section of Walmart, Wholefoods, Stop and Shop or Price Chopper. Cost $3.49 Calories- I use ½ serving(2 ounces) 60 calories for meat and 40 calories for sauce= 100 Calories
Meatballs- Gardien Meatless Meatballs- found in same stores as Meat Crumbles. Cost $3.49 per package of 12. Calories- 2 Meatballs=100
Parmigiana Cheese- Same as above. Calories: 20
Total calories: 400
Directions:
Cook spaghetti to desired texture
Place frozen meat and meatballs with 4 tbs of water into the microwave for 2 minutes.
Drain pasta, add meat, meatballs and sauce to pasta
Dash of Parmigiana Cheese would be a nice topper
