Just because you are practicing a vegan lifestyle does not mean that you have to live on plants alone. There are so many good products on the market today that makes dinner time as good as any carnivore’s meal.
Today we will be creating my Chick’n Scallopini dish.
This meal takes 15 minutes and includes:
2 Chick’n Breasts 200 calories
1 Baked Potato 125 calories
2 oz of Black Beans 50 calories
1 tb of vegan butter 80 calories
Pico de Gallo 10 calories
Total Calories 465
Directions:
Place two Gardien Chick’n Scallopini breasts in a pan on the stove top with a little butter spray (zero calories) on top and bottom. From frozen- in a non stick pan over medium heat for 1 minute on each side. Add 3 Tbsp of water (per 2 pieces) cover for 2 minutes. Uncover, turn and cook for an additional minute.
Place medium potato in the microwave for 5 minutes, or until desired softness
Measure 2 ounces of Black beans and head in microwave
Create Pico de Gallo – cut up cilantro, tomato, jalepiono and onion, mix with balsamic vinegar, salt and garlic to taste. I usually make a big batch of this and add a scoop to spice up a meal
Once Chick’n is cooked place on plate with potato(add vegan butter), cover potato with beans and Pico dressing.

Goya Black Beans- 89 cents a can, you can’t go wrong with black beans!
Found on most supermarkets in the vegetable or “hispanic” section.
